Interior Rebranding Concept for a Café-Bakery Chain

This project was developed as an interior rebranding concept for the British Bakery café-pastry chain.
The proposal was created for a new café in the atrium of a shopping mall in Sydney and was aimed at improving the commercial performance of the space, enhancing the customer experience, and presenting the brand in a more contemporary way.
The main objective was to create an open, clear, and customer-friendly layout that supports a fast-service format while also making the space more comfortable for longer visits. The core of the concept is based on open product display, a traditional English-style bakery counter, and a clearly organised retail zone that improves product visibility and simplifies customer interaction with the offer.
Because the café is located within a shopping mall atrium, it was important for the layout to perform well not only at eye level but also when viewed from above. The spatial composition was therefore designed to read clearly from the upper levels of the mall, allowing the café to appear organised, coherent, and visually attractive from multiple viewpoints. This strengthens its presence within the atrium and makes it more noticeable in the overall commercial environment.
Special attention was given to the product display strategy. It was designed to engage not only visitors who already intend to enter the café, but also the flow of people passing by without a prior intention to stop. Fresh pastries, desserts, and warm baked goods are presented at eye level, creating immediate visual contact with the product and increasing spontaneous interest. This approach draws not only on merchandising principles, but also on behavioural patterns in consumer perception: when food is visually accessible and appealingly presented at human eye height, it significantly increases the likelihood of impulse visits and purchases.
The concept also includes a souvenir shop area, a contemporary children’s zone, barrier-free access, and an open layout that allows for smoother circulation throughout the venue. An additional focus was placed on creating the feel of an outdoor terrace through the treatment of the shopfronts, as well as on using durable flooring suitable for intensive use in a public commercial environment.
As a result, the project proposes a more contemporary and commercially effective model for a café-bakery, where layout, visual presentation, product display, and customer flow work together as a single system. The interior was conceived as a rebranding tool capable of strengthening the visual identity of the chain, increasing its visibility within the shopping mall, and attracting both target customers and spontaneous foot traffic.
